BANANA MUFFINS

 

All around the world now, most people are staying home due to the Covid-19 pandemic. That has inspired many to start baking, some out of necessity and some out of boredom. Here’s a quick and easy banana muffin recipe that you can make in less than an hour and it’s so simple that you can get your kids involved, like I did mine. Gather your ingredients and bake along with my son and I. Stay safe, stay healthy and keep baking!

Ingredients:
(Makes 12 muffins)

3 ripe bananas, mashed
80g unsalted butter, melted
180g plain flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
180g fine sugar
1 egg
Walnut pieces (optional)

 

Method:

  1. Stir melted butter and sugar together in a large bowl
  2. Beat in 1 egg and mix until combined
  3. Stir in mashed bananas until well-mixed
  4. Sift flour, baking soda, baking powder and salt together, then stir into banana mixture
  5. Portion into lined muffin tray and sprinkle walnut pieces on top
  6. Bake in a preheated oven at 190oC/375oF for 15 minutes, until golden brown
  7. Remove from oven, cool and enjoy!
