BANANA MUFFINS
All around the world now, most people are staying home due to the Covid-19 pandemic. That has inspired many to start baking, some out of necessity and some out of boredom. Here’s a quick and easy banana muffin recipe that you can make in less than an hour and it’s so simple that you can get your kids involved, like I did mine. Gather your ingredients and bake along with my son and I. Stay safe, stay healthy and keep baking!
Ingredients:
(Makes 12 muffins)
3 ripe bananas, mashed
80g unsalted butter, melted
180g plain flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
180g fine sugar
1 egg
Walnut pieces (optional)
Method:
- Stir melted butter and sugar together in a large bowl
- Beat in 1 egg and mix until combined
- Stir in mashed bananas until well-mixed
- Sift flour, baking soda, baking powder and salt together, then stir into banana mixture
- Portion into lined muffin tray and sprinkle walnut pieces on top
- Bake in a preheated oven at 190oC/375oF for 15 minutes, until golden brown
- Remove from oven, cool and enjoy!
